O.S. only provides one size of cylinder head gasket. If you want other thicknesses, you'll have to make them yourself. It's not difficult, and you can easily make them by hand with brass or aluminum sheet, a sharp knife with a #11 blade, and a very fine honing stone. You just carefully cut out the gasket from the brass sheet and then hone it on the stone. To hone, just lay it flat on the stone, add a bit of oil and gently move it around until the burrs are gone. You can also use 1000-grit sand paper to dress the inside and outside edges.
