It depends on the type of boat and its construction (easiest) method.
There are lots of scratch build threads on here (and other RC sites) that can give you ideas on how to build from scratch.

A lot depends on the type of boat. Some shapes are good for sheet ply, some easier done plank on frame. Sometimes its easier to make a plug and glass it, and very often the best method is the one that you are comfortable with. There have been working boats made from cardboard. All that is needed is a structure that will hold together against the forces applied by the water from the outside, and the working parts from the inside, that has a surface that is impervious to water. All the model does is keep the paint the intended shape - its only the paint that anybody actually sees.

Rounded hulls ANY PART OF THEM is a real pain and waste of time & material.
That is why I built the 8 foot boat out of 1/8" plywood. Bow curves took 2 attempts.

5-ply 1/4 or 3/8 inch thick wood for a frame and some thing thin for a skin. then fiberglass it and it will be VERY strong. I battle the rc warships and that is basically how I build my boats.

You want to use 1/8 or 1/16 inch framing, and balsa then. The hull will have to stay real light.
Once you have the hull built up, then use the lightest fiberglass cloth or matte you can find.
1.5 ounce or lighter if you can find it.
