Default assembling battery packs

Alright so far all I have bought battery wise are assembled stick packs. Soon Im going to want to build my own packs. Ive heard that when you sauter the connectors from cell to cell on and you hold the iron on for too long the cell will go bad because of the heat. I just want to watch out for that stuff so I dont ruin perfectly good cell when I try to put them together. Any things or tips that you have for assembling packs?
