Keep in mind that except for using iron on covering, the surface will need painting, the experiences I have had in order of weight, heaviest first, and will possibly need glassing;
1) 1/64 th ply
2) 3/32 balsa
3) 1/16 balsa ( usually provided in kit covered cores ) 1/64 balsa, I feel, is too thin to give a good result
The above can be covered in iron on coating or glassed and painted.
Obviously the 4 oz cloth is going to come out heavy as will 2 oz and I would not use unless there is a structural reason.
I use .5 oz to .75 oz and a good finishing epoxy, then paint it when it is prepared. The iron on is easier to keep clean of oils and dents are easy to take out though.

I prefer 1/16 balsa wood.
