Welcome to the forum.
1/4" Sheeting is going to be a little on the heavy side.
Best power is going to be dependent on your budget and your performance goals. Zenoahs, Sikks, and RCMK's are by far the most popular and best performing motors but your spending around $200 before buying all the other parts and accessories (mounts, collet, pipe etc).
One popular option is the builder kit from Warehouse Hobbies. Aircooled Motor only - http://www.whhonline.com/product_p/ez23rc.htm or motor and all needed hardware - http://www.whhonline.com/product_p/builderspecial.htm

Try here:
http://www.aeromarinerc.com/
If you can't find what you are looking for there, try Top Secret boats. I second the easy vee, I'm building one now, great boat and great price. I couldn't cut the kit for the price! I got my hardware from the above mentioned sources, and I'm running a Zenoah G-26 marine stock on a tuned, water cooled pipe.

Is a quarter inch stub shaft thats 4 1/4 inches long what i need? is that the same thing as a prop shaft? and how does the flex cable from the weedeater fit into the ferrul??and as far as the prop i only found a 70mm Diameter
3.85 inches Pitch prop. it also said 470.

Measure the distance between the bottem of your square drive socket on the engine to the rear of your strut. Cut the cable with a dremmel a little more than a 1/4 inch longer than this number. Buy good silver solder and flux and braze the ferrule onto the flex shaft you just cut. Don't forget to soak the newly brazed parts in bakingsoada and water to neutralize the flux. (Overnight should be fine)
Good luck and I know you'll be happy when you toss her in the water. I built a weedeater boat and she rips. She's an OLD Prather hull with a Holmelite 30cc&water cooled head, Proboat hardware and Two inch band tuned pipe. Let know if you want any more picks.

Post a pic but yes zenoah motors are good usually
.By the way regarding the flex it fits in the ferrule using either silver solder or you can use loctite retaining compound, the ferrule has a hole for the flex. You need a prop of arround 75 mm 70 mm props a bit small.

The motor is off of a gas powered scooter and it could run it about 20 to 25 miles an hour, but do you think it will turn enough rpms to get the prop moving fast enough??
